Our Roaster

Our coffee is roasted on a Probat G90 drum roaster built-in 1953 in Emmerich, Germany. We’ve been roasting with this robust, antique roaster since the early ’90s. It produces consistent, clean-tasting roasts that enhance the unique characteristics of each coffee. The ingenious design allows us to regulate airflow throughout the roaster and meticulously control the temperature. This roaster uses natural gas to fuel 72 burners below the rotating cast iron drum for even heat distribution. Three levers allow the roaster to control the application of the heat throughout the roasting process. We develop a custom roast profile for each coffee that is modulated with the assistance of roasting software for an accurate roast every time.

Our Roasting Philosophy

Our process begins by evaluating countless coffee samples from producers around the world and searching for the most compelling cup characteristics. It is then our responsibility to highlight our favorite qualities in each coffee by designing a roast profile to accentuate the best attributes. We strive to develop sweetness, clarity, and most importantly balance while avoiding any roast flavors that can eclipse a coffee’s complexity.
